canning snob...
SO, i'm doing it. i'm canning and it's actually not that bad. the first time, i must say was quite rough but i think i'm getting the hang of it. today i was able to can three different type of beans, mixed vegetables, vanilla apricots and pineapple. all before the lovely hour of 11pm. not bad. the things that i've learned to make my canning life easier:
1. prep all the food the day before. then can the next day. i swear that was the biggest lesson of all.
2. don't freak out over the gauge. if it's a little higher than called for, it'll be fine. the pressure cooker won't explode. i promise.
3. stop being paranoid. the canning will work. you will not poison your family and you'll have lovely food to eat at a later date.
i have found that if i buy 4 fresh pineapples at $2.99 each you can get 8-9 jars. that comes out to being roughly $1.32 a jar. i was buying jarred pineapple at $2.39 each. so, all in all i truly am saving money and making my family healthier in the process. as adam sandler would say, not to shabby. the snobbery will begin..... NOW!
