homemade granola bars...

SO, after reading {THIS} today, it made me ever so glad that i am obsessive about what my kids eat. above that, i'm glad i make sure to try and make everything i can from scratch because let's face it,  most stuff not in the produce aisle is loaded with junk.  

one of my endeavors yesterday was making granola bars.  my kids love them, i hate all the additives that are in the store bought ones (even organic ones.  read the ingredients panel) so making them is the only way they are going to get them.  

so i'm sharing my recipe with you.  don't you feel special???

start with homemade granola. (you can buy some if you don't want to make it.  but give it a try, it's super easy and way cheaper.)


5 cups quick oats
1 cup flax seeds
3/4 cup brown sugar
1/3 cup concentrated apple juice
1/2 cup dry milk
1/3 cup honey
2 tablespoons vanilla
1/2 teaspoon salt

mix sugar, juice, dry milk and honey in a saucepan, and heat until sugar dissolves.  combine other dry ingredients in a mixing bowl.  pour sugar mixture slowly over dry mixture and blend well.  place on a cookie sheet and bake at 300 degrees for 30 minutes, stirring every 10 minutes.

once the granola has cooled, you're ready to make granola bars!


1-1/2 cups granola
1/4 generous cup honey
1/8 cup chopped nuts, dried fruit or chocolate chips
1 egg

combine well and press into a greased 8X8 baking pan.  bake at 350 degress for 20 minutes. 


slice into bars once they are cool.



i individually wrap mine up so that my kids can grab them for school snacks or just to snack on in general.  makes for less mess i find.
