yes, i'm posting another recipe right after the other one. you'll just have to get used to that. since i'm making things from scratch now a days, i've been making a lot of soup/stews. they always turn out good (it's really NOT that hard to do) but they always come out different. mostly because i don't follow recipes and just throw in what i have on hand. the stew i made on sunday was so good though i had to write it down. seriously. i know it's fantastic when my kids eat every drop, ask for more and tell me repeatedly that it's the best soup so far! i used rocket in it but told the kids that it was spinach simply because they love spinach and i didn't want a fuss from them. yeah, i lie to my kids sometimes to get them to eat things. whatever.
anyway, back to the recipe, now that it's friday we'll see how much i remember. sigh. here it goes!
onions, diced
garlic, sliced
olive oil
carrots, diced
cooked bacon, chopped up
cooked red pepper,basil, mozzarella chicken sausages, diced (you can use whatever sausages you want)
cooked potatoes, cubed
white beans
rocket (arugula, whatever you want to call it)
salt/pepper
1/4 cup tomato sauce
1 1/2 liters organic chicken stock
1/4 cup heavy cream
sweat the onions, garlic and carrots in the olive oil until quite tender. add the chicken stock and tomato sauce and simmer for an additional 10 minutes.
add the remaining ingredients (except cream) and simmer for at least 20 minutes but remember the longer it simmers the more the flavors marry together and taste yummy.
right before serving add the cream, check seasoning and serve with a nice crusty hunk of bread!
***you can do all sorts of things with this recipe. you can add celery, have spinach or fresh basil instead of rocket add red pepper flakes if you want it spicy. add noodles instead of potatoes the options are endless. that's what i LOVE about soups and stews. you can do no wrong. it's awesome!*****
