SO, instead of being able to go to church today, elise woke up with a headache. poor kid. this is the same age i was when i started to get cluster headaches several times a week. i knew without a doubt she wasn't lying when her friend called to talk with her and she literally hung up on her because she was in so much pain. after giving her some pain medicine and some serious whimpering from her about "THE PAIN MOM. IT HURTS!" she finally started to feel better. this gives me hope that her headaches won't be nearly as bad as mine. i can never get a headache to go away with pain medicine.
now on to wesley. well, his situation was a bit scarier. i woke up at 9am freaked out that no one had woken me up. wesley with his built in alarm always wakes up by 7am. i went in to find him just laying in his crib staring at the ceiling. it was pretty strange and totally out of the ordinary for my hyper active children. i took him down stairs and got distracted by elise. when i finally remembered wesley, he had laid down flat on his back on the floor and had a glazed look staring at the ceiling. that's when i noticed he was struggling to breath. what a horrible feeling that must be to not be able to breath. i quickly went and got his medicine and gave him a treatment. he looked so desperate to catch a breath. he seemed to feel a little better after that, that is until he threw up on me. well, then he really perked up. sigh. so gross. i can do without vomit thank you very much. for the remainder of the day he had breathing treatments and he was much better by the time he went to sleep. i'm so grateful that i didn't have to take him to the ER for more aggressive therapy. i swear, his asthma scares the crap out of me.
so, now that i've mentioned vomit let's move on to why i really was writing this post. i'm posting a pretty awesome meatloaf recipe. we don't eat much meat in our family but for some reason i found the need to buy 6 pounds of grass fed organic ground beef the other day. yeah... 6 pounds. i have no idea why. but anyway, i figured i'd make something up with the meat and then freeze it for whenever we did decide to eat meat. so today i spent the majority of my time dealing with cranky sick children and making meatballs and meatloaf. oh, and i did two batches of cookies as well. because we were out and you always need cookies. on a side note, i just have to say that it's been almost a year since i've had meatloaf. like i said, not much meat. but i as my usual self, threw in whatever i had and what i thought would be yummy. this is what i made today...
spinach meatloaf
sorry but i don't have exact amounts again. except for the beef and eggs, just put in however much you want. oh, and i used almonds that i ground up in the food processor instead of breadcrumbs because well, it was really because i've had almonds lying in my cupboard for i don't know how long and i really just wanted to get rid of them. but if you think about it almonds have so much more nutritional pact then bread crumbs so it's a tad healthier.
3 pounds ground beef
2 eggs
worcester sauce
ground mustard
fresh spinach, chopped
onion, finely chopped
garlic, finely chopped
salt, pepper
use fresh or dried: parsley, basil, oregano
ground almonds
olive oil
spaghetti sauce
mozzarella cheese (optional)
put the spinach, onion and garlic in a sauce pan with a little olive oil and salt. saute in the pan until the spinach has completely wilted and the onions and garlic are soft. remove from heat and leave to cool.
put the rest of the ingredients (minus spaghetti sauce and cheese) in a very large bowl. when cool, add the spinach mixture to the meat and stir until combined. transfer to mini meatloaf tins or one large tin. add a generous amount of spaghetti sauce on the top. bake in a 350 oven for 45 minutes. at the 40 minute mark add the mozzarella cheese on top and cook for the following 5 minutes.
leave to cool for 10 minutes, slice and serve with a crisp salad and some crusty bread. you can add more spaghetti sauce if desired. enjoy.
--this makes A LOT, so you could serve half and freeze the other half for another day. the meatballs are basically the same recipe (minus the cheese and sauce) and just made them into balls. i baked them at 350 for 25 minutes. after they cooled completely i put them in a bag and put in the freezer. now you can pull out a couple meatballs for whenever you want them.--
