easiest summer strawberry sorbet....
SO, i'm a total freak about sorbet. and i'm an even more of a freak when it comes to watching people spend exorbitant amounts of money on said sorbet from the grocer. if only they knew how cheap and easy it is to make. i'm giving you my favorite recipe for strawberry sorbet, since my children are addicted to strawberries and all. in fact, the last batch we made went in a single go. it was amazing. alright, enough. here's the recipe...
summer strawberry sorbet
2 1/2 cups sugar
2 1/2 cups water
4 cups of the juiciest mushed up strawberries, any juice included*
1 1/2 cups greek yogurt**
put the sugar and water in a pot and bring to a boil. simmer for 3 minutes then remove from heat. cool completely.
put all the ingredients into a blender and blend until smooth.
either place in an ice cream maker or simply put in a freezer safe container and place in the freezer until set. pull out about 5-10 minutes before serving to make it easier to scoop. enjoy enjoy enjoy!
* it is absolutely essential that the strawberries are the best most juicy you can find. this will make it the sorbet amazing and totally worth every bite.
**you can use any greek yogurt you want. full or non-fat, they both come out the same. if you don't like the tang from greek, you can use regular yogurt or use no yogurt all together. you will just need to adjust the sugar/water. use 2 cups water and 2 cups sugar.
